Pancakes are a staple for any holiday breakfast or brunch. Whether you're hosting a small gathering or just cheffing up some pancakes for your loved ones this holiday season, you can easily add some peppermint to your pancakes and capture the season on your plate and in your bellies.
For this recipe, I decided on chocolate chip pancakes because my husband, a die-hard chocolate chip pancake aficionado wouldn’t have it any other way. A bit of a pancake snob, in our house he only eats pancakes with chocolate chips.
With that being said, he was hesitant to give the peppermint a try, but he absolutely LOVED them! Much like hot chocolate and Elf on Christmas Eve, I think peppermint chocolate chip pancakes during the holidays will become a McCray family tradition!
To make the chocolate chip peppermint pancakes recipe all that you have to do is add peppermint extract! Yes, that’s really it! For this recipe you will need:
Pancake mix
Peppermint extract
Crushed candy canes
Griddle or pan
Mixing bowl
Whisk
Spatula
Olive oil pan spray
Do I need to make pancakes from scratch for this recipe?
No, absolutely not. You can use a pre-made mix for this recipe or your own favorite from-scratch chocolate chip pancake recipe. For either option, all you have to do is add a few splashes of peppermint extract and some crushed candy canes!
Keep in mind though, to keep it easy peasy, I recommend using a pre-made mix. For this recipe, I used Birch Benders Chocolate Chip Pancake Mix. All you need to do is add water to the mix. It is non-GMO verified and seriously some of the very best pancakes I’ve ever had! How do I crush the candy canes?
Great question! I previously tried to put the candy canes in their wrapper in a Tupperware bowl and crush them up that way. However, I found it 10x faster and easier to just put them on a cutting board and bust out the hammer!
The hammer immediately breaks the candy canes up with one decent tap. Depending on your preference and how small your littles are you can crush them down to pretty much dust or just break into a few pieces. If children are under 4 I would recommend just leaving the crushed candy canes off their plate. But don’t quote me on that, I’m not a physician.
What else can you add to the pancakes to make them more festive?

Beyond that, it’s really up to you what you want to top your holiday chocolate chip peppermint pancakes with. I just went with plain old syrup for the win!

Easy Chocolate Chip Peppermint Pancakes
Ingredients
- 2 servings of Birch Benders chocolate chip pancake mix
- 2 teaspoons of peppermint extract
- 2 tablespoons of crushed candy canes
- Olive oil pan spray
Instructions
- In a mixing bowl, make 2 servings of Birch Benders chocolate chip pancake mix (see package for details)
- While whisking add peppermint extract
- Coat heated griddle or pan with olive oil pan spray. Put temperature somewhere between medium and high
- For each pancake use about 1/4 cup of batter on a hot griddle or pan
- When one side starts to bubble (about 2 minutes) flip pancakes and cook for another 2 minutes
- Repeat step 4 & 5 as needed
- Serve immediately and top with crushed candy canes and syrup of your choice
Notes:
Use a hammer to crush the candy canes. Do not serve crushed candy canes to young children or toddlers. Add in extra chocolate chips to batter if you really love them! Use your own favorite pancake recipe or any store bought mix, the choice is yours!
