if you’re planning to use the refried beans from scratch for dishes then I recommend leaving them just slightly chunky. If you’re planning to use them as a dip then I suggest making them extra smooth.
Save time with canned pinto beans
As I mentioned, to make these refried beans from scratch you need to start with pinto beans. You have 2 options, start with uncooked pinto beans or buy fully cooked pinto beans from a can. The latter will save you a significant amount of time and that is the option I chose for this recipe.
Baking spatula to get all the beans out of the pan
A baking spatula is a must whenever making refried beans. The baking spatula will help ensure you get every morsel of food out of the pan that a regular serving spoon would miss.
Cook time
You can simmer on really low for 20 mins or simmer medium heat for 5 mins if you’re in a pinch/time crunch. For this recipe, I simmered the beans with the bloody mary mix and spices on low heat for 20 mins so it could really soak up all the flavor.

You can store the refried beans in the refrigerator for up to 4 days and you can store them in the freezer for up to 90 days as long as they are in a completely sealed container. If you notice freezer burn forming inside the container you may want to thaw them out and use them for the best results.

Refried Beans From Scratch, Bloody Mary Obsessed Style
Ingredients
- 2 cans of pinto beans (15oz cans) rinsed and drained
- 1 tablespoon of olive oil
- ¼ cup of a white onion diced
- 1 tablespoon of minced garlic
- A few pinches of black pepper
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- ½ cup of a smoky bloody mary mix
- A handful of fresh cilantro
- 1 tablespoon of fresh-squeezed lime juice
- ½ cup of cojtia cheese
Instructions
- In a medium saucepan, heat and add olive oil and white onion and cook until the onions are translucent. While onions are cooking drain and rinse to cans of pinto beans
- Once onions are translucent, about 6 minutes, add garlic, chili powder, cumin, and black pepper to the pan, evenly coating the onions. Add the pinto beans and the bloody mary mix to the pan, stir and turn the heat to low. Simmer on low for 15-20 mins, do not let the beans become dried out but also make sure most of the liquid has been absorbed
- Once your beans have become soft and can easily mash with a fork, use an immersion blender to mash the beans to your desired consistency. Mix in half the cilantro and all the fresh lime juice. Remember, chunky for dishes, smooth for dips
- Garnish the Refried Beans From Scratch, Bloody Mary Obsessed Style with cilantro, avocado (optional), and cotija cheese
Notes:
