Over the last few years being a freelancer and entrepreneur who’s building a brand, my free time has dwindled down to almost zero! When I do have free time the last thing I want to do is be in the kitchen for hours and making a huge mess. A far departure from when I worked a regular 9-5 and would try new recipes from Pinterest several times a week! In comes this Baked Lemon Fish and Roasted Tomatoes Recipe to the rescue!
I really love white fish, especially mahi-mahi and halibut and if you look at the title of this blog, then you know I love tomatoes! Combining two things I love that I can whip up in the middle of the workday, makes this recipe pretty much a staple every week. In under 25 minutes, you can have a gourmet meal that is full of flavor and super healthy! If you’re busy like me and didn’t get a chance to marinate the fish ahead of time, that’s totally okay, you don’t have too!
For this recipe you will need:
A white fish such as mahi-mahi or halibut
Lemon
Cherry tomatoes
Montreal steak seasoning
Salt
Butter
Garlic
Parsley
Baking Sheet
Can I use other vegetables?
I would say absolutely you can roast other veggies other than just tomatoes. I would recommend if you do veggies like asparagus or broccoli you roast precooked veggies. In my opinion, 15 minutes is not enough time to roast raw asparagus or broccoli.
Parchment paper or buttered pan?
I’ve cooked the Baked Lemon Fish with Roasted Tomatoes twice in the last 2 weeks. Once with parchment paper and once in a buttered pan. I would highly recommend the buttered pan over the parchment paper.
Should I use mahi-mahi or halibut?
I think it depends! I’ve used both fish and it honestly tastes pretty much identical. Your budget might play a role. I always buy the Orca Bay Seafoods brand of frozen fish from Sprouts that’s wild-caught and non-GMO verified. Mahi-Mahi runs about $10 for 2-3 filets while halibut cost about $16/$17 for 2 filets.
How long do I cook the fish?
Cook the fish 15- 20 mins or until the internal temperature reaches 145 degrees. The Orca Bay brand I mentioned gives different cuts and sizes all the time so for me, it will depend. A good test is when the fish easily flakes with a fork!
Lemons on top?
The first time I cooked the Baked Lemon Fish with Roasted Tomatoes I did not put lemon wedges on top. Rookie move! Placing the lemon wedges on top helps seal in the flavor and keep the fish from drying out. After the fish is finished baking, squeeze the lemon wheels over the fish!
